Ingredients
- 1 cup creamy peanut butter
- 3/4 cup granulated no calorie sweetener (Splenda)
- 1/4 cup packed brown sugar
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1 large egg
- Do not use a medium egg or an extra large egg as this will cause bad things to happen.
- Preheat your oven to 350 degrees.
- Combine the peanut butter, sweetener, brown sugar, baking soda, and vanilla in a bowl and stir until everything is mixed together.
- Add the egg and stir some more until it is fully incorporated.
- Divide evenly into 24 separate 1 inch balls.
- One level tablespoon is the perfect amount for each ball. You will just need to round it out with your hands once you scoop it out.
- Place each cookie on an un-greased cookie sheet.
- Flatten each cookie with a fork, making a checkered pattern.
- Bake the cookies for 10 minutes.
- Let the cookies cool for 5 minutes on the cookie sheet before removing to a wire rack to finish cooling.
- This actually finishes cooking the cookies so don't skip this step or your cookies will be a little underdone.
- This recipe makes 24 cookies.
- Each cookie is a single serving.
- Yup, you are only supposed to eat one at a time... good luck with this.
